This frosting will turn a healthy muffin into a decadent dessert. It is perfect on top of the Oatmeal Blueberry cake. It is sugar, oil and dairy free and so delicious. Whip it up in minutes. There are only four ingredients!
Ingredients:
1 cup raw cashew nuts
3/4 to 1 cup liquid (water or your choice of non-dairy milk)
1 teaspoon of Vanilla
8 to 10 Medjool dates*
Simply blend all of the ingredients in a high speed blender for 1 to 2 minutes until smooth and creamy. There should be a slight sheen to the frosting when it is blended to perfection. The frosting will be thick enough to spread on your muffin or cake immediately. It will also thicken more when refrigerated.
*There are many varieties of dates. The easiest dates to find are medjool dates and Deglet Noor. Medjool dates are larger and softer and a bit more expensive then the Deglet Noor Dates. You may want to adjust the amount of dates (add 3 or 4 more) in this recipe if you use the Deglet Noor date or a smaller variety.
